How many of you love beef? And how much do you love the combination of beef + noodles (beef noodles)? But how much do you know about beef? Let us take a look on the diagram.

Does that make you understand the diff parts of a cow while having your steak?

Brisket is the breast or lower chest of the cow and it supports about 60% of the cow's body weight while standing or moving. Thus it has significant number of connective tissues which explains why it takes one's skills to get cook correctly in order to tenderize the tissues. And I shall leave you to read on about the different parts of a cow here. Quite detailed and clear cut on how each part should be cooked too.

So have you peeps been to Taiwan and had their beef noodles? Would you love to have it in Singapore for an after-taste from your trip? I would love to. So here at Le Nu 乐牛 food tasting session. We get to choose 2 bowls of beef noodles and 2 appetizers (1 for me and 1 for guest). 

First of all, you choose on the right of menu what you want. Then choose the soup (Authentic Braised Beef Soup, Braised Beef Soup w Pickled Cabbage or Hot & Spicy Braised Beef Soup) and then the noodles (Thin, Broad or Rice Noodles).

Appetizers up! Upon making payment at the cashier counter, you can grab your chosen appetizers at their chilled display unit next to it. I love the tofu to bits. It was so silky that you might think that you are having some tofu jelly. 

Authentic -  Braised Beef Tendon & Brisket Noodles $12.90

Here in this bowl (above), you find both tendon and brisket in one bowl. Nice! Le hub had this and was impressed by both the beef and soup base. The soup has its mild sweetness. Lovely! That pickled cabbage added a little crunchiness as you have it along with the noodles. No doubt on this bowl of hot piping beef noodles.

Here is their dipping sauce on every table. To enhance the taste further, dip with the meat or probably stir it in your soup base. You might find an unique taste that probably suits you. But embrace yourself as you may or may not get the 3 diff levels of taste in 1 sauce. Le hub got that initial stage of saltiness. That's all. How about you telling me if you get saltiness, spicy then sweet taste in this sauce. Go on. Try it at Le Nu 乐牛 now!

Hot & Spicy - Braised Beef Brisket Noodles $10.90

Here is my order. Initially choose Broad noodles but le hub ordered the wrong one for me. I had thin noodles instead (same as him) which is superb waste. Nevertheless, the noodles were great! Smooth texture and well-cooked. You can tell that the noodles have went through hot and cold water to get that springy bite! For the beef, the meat is soft and tender. Properly cooked to the max as you hardly find it difficult to chew on. Even the muscles are so soft that it can melt easily without chewing on.

The soup base was good. Spiciness did not overwhelmed me. Suitable for people like me with low threshold for spiciness.

Initially when it is served, we were wondering which is which. And then we identified through their soup base. Quite obvious isn't it?
