[RECIPE] Simple Christmas Feast At Home
Just in time for Christmas! Being an amateur home cook and baker cum your hardworking blogger, decided to create and pen down a simple Western and Asian mix Christmas feast for your reading and visual pleasure. And also for me to refer back in future.
My skills ain't that good but all the food prepared here were at least edible if you lower your expectation. So let my post take you through what I have made and probably you can try or even do better than me this Christmas. Even your kids can do it!
CHRISTMAS CANAPE(S)
1. HAM AND CHEESE

Ingredients:
- Ham and shredded cheese (I use a mix of mozzarella and red cheddar cheese)
- A mixture of tomato and chilli sauce (makeshift pizza sauce)
- Top it with parsley flakes
- Flavoured crackers
- Lettuce and tomato
Method:
Crackers as the base, 1st layer be the ham (cut to size), 2nd layer be mixture spread on ham, 3rd layer be sprinkles of shredded cheese, lastly some parsley flakes.
Put into the airfryer for 4-5 mins at 200Ā°C or till the cheese melts. Beautify with lettuce and tomatoes on the side.
2. PRAWN CANAPES

The ingredients will be the same as Ham and Cheese Canapes, just add prawns on top of the ham, sprinkle with cheese then parsley flakes. Please note that the prawns are boiled in advance. And using the same crackers, I break them into two for bite size eat.
Put into the airfryer for 4-5 mins at 200Ā°C or till the cheese melts.
3. PIZZA BREAD

Ingredients:
- Slices of bread, cut away the crust
- Ham and Shredded Cheese (I use a mix of mozzarella and red cheddar cheese)
- A mixture of tomato and chilli sauce (makeshift pizza sauce)
- Green peas
- Frozen prawns, boiled and slice into half
- Parsley flakes
Method:
Spread the bread with mixture. Put ham on top. Spread a layer of mixture again (on ham). Sprinkle shredded cheese. Put 4 prawns (halved) on top. Sprinkle with shredded cheese again. Top with green peas and parsley flakes.
Put into the airfryer for 4-5 mins at 200Ā°C or till the cheese melts. Once done, cut each slice into 4 portions and serve. You can also have it without cutting.
CHRISTMAS BAKE(S)
1. FERRERO ROCHER MUFFINS


You can refer to the post here for the Keto Muffins recipe. This time I added Ferrero Rocher inside to make it taste a little Christmas and sweet. Kinda out of the diet. Haha... eat first, diet later.
CHRISTMAS MAIN(S)
1. SPICY PRAWN SPAGHETTI WITH BROCCOLI


Mister sent me a video on the pasta making and knowing that he doesn't really like pasta but anything spicy, he is willing to give it a try. And so I decided to do it for dinner in order to clear the last bits of pasta in the kitchen.
Modified the recipe with whatever I have in the kitchen instead of buying again. Mister said it tasted like Mee Siam and the spiciness is mild, which is great for those who can't really take spicy. Angel Hair kind of breaks easily so I suggest using those normal Spaghetti. Oh no wonder the outlook like Mee Siam too, not just the taste.
Ingredients:
- Prawns (marinate with 2 tsp cornstarch and a pinch of salt)
- Angel Hair, boiled till al dente
- 1 cup of Broccoli, boiled
- White sesame seed (to sprinkle on top)
Sauce Mixture:
- 2 tbsp light soy sauce
- 1 tbsp fish sauce
- 1 tbsp water
- 1 tbsp honey
- 2 tbsp chilli powder
- 1/4 tsp pepper
Method:
- Boil pasta, add some oil in it, once cooked, set a side.
- Heat the pan with 3 tbsp olive oil and fry the prawns.
- Put in minced garlic and fry till fragrance. Then add 1 tbsp butter.
- Add in sauce mixture and mix well with prawns.
- Add in cooked pasta and mix well.
- Add broccoli and lightly mix with the pasta.
- Turn off the heat and sprinkle with white sesame seed.
CHRISTMAS DESSERT(S)
1. LONGAN ALMOND TOFU


Let's have a mix of Western and Asian Christmas Feast, starting with this dessert which I bought from Giant supermarket and is made in Taiwan. Not many people like Almond taste because it smells like cough syrup I think but anyway, my personal favourite, like how I love durians too.
Just follow the instructions behind the packaging and you made it. As part of clearing the kitchen to usher the new year, I found a canned fruit in the cabinet and decided to go with the dessert. If not, topping up with some black sesame seeds can do the trick too.

2. AIYU LONGAN JELLY


Another Asian dessert and it is also made in Taiwan. Bought at the same time as Almond Tofu and finally have time to make them all. Since still have leftover canned fruits from Almond Tofu, let's use it for Aiyu Jelly.
CHRISTMAS DRINK(S)
1. THE CHOYA ROYAL HONEY ON THE ROCK


There are many Christmas drinks that you can make but now I shall use what I have at home to do for you peeps.
I find Royal Honey suitable for ladies and you can drink it on its own without ice too. Am grateful to be gifted this bottle by my ex-colleague now friend. And also my bestie for the ice molds that she gifted me on Christmas many years ago. Now of good use rather than collecting dust. The big round ice looked so presentable for your guests.
Instead of serving up with nuts, make do with frozen strawberries. Let's usher in this Christmas and New Year with good health and prosperity.
2. LEMON SODA


Perfect drink for all. Making use of the lemon juice (squeeze them on my own) and a can of Soda water I have in the fridge to make it. The taste is a little salty so if you want, add another teaspoon of sugar maybe. Serve with mixed nuts and with the ice melts slowly, you can enjoy a long chat with your family and friends after a meal.
Ingredients (yield 1 drink):
- 2 tbsp of lemon juice, freshly squeezed
- 1 tsp of sugar
- 1/4 tsp of salt
- 1/4 cup of chilled water
- 1 cup of Soda water
- Ice cubes
Method:
- Mix lemon juice with sugar and salt.
- Add chilled water in and stir till sugar dissolved.
- Add ice cubes and pour in Soda water.
- Serve.
3. HOT CHOCOLATE

Not sure if anyone know but I love Hot Chocolate and every time I go to Starbucks, definitely order a the Signature Hot Chocolate. Now that I got the powder at home, I can enjoy anytime. Is it just me or anyone feels the same tha Hot Chocolate is Christmas, especially when you top it up with marshmallows. You can serve your guests Hot Chocolate too.
Recipe: I used unsweetened Almond Milk (300ml) to make my Hot Chocolate (3.5 tbsp) and top with 5 marshmallows. This yields 1 mug.
