Snacks Review | Just Nuts Singapore (and Simple Recipes included)

When you can't travel out for holidays but still get a piece of Just NutsDried Mangoes (Thai) to savour at home like you are in Thailand. Sweet.

Imagine Mango Sticky Rice and Thai Mango Salad. Oh Thailand... how I miss you so much, especially when we can't travel anytime now like before.

Dried Mangoes (Thai)

Made White Fungus Soup with Just NutsDried Longan and honestly it was sweet when I tried one on its own. As you boiled them, it just blossomed out like flowers to it original state and it also released the natural sweetness before I put in rock sugar.

Just Nuts packed them in resealable bags of 100g each (I got myself 300g for desserts making). Convenience for storage and easy to gauge how much you want.

Ingredients:
1 cup of Red dates
1/2 cup of Peach gums, soaked overnight
1/2 cup of Snow Lotus seeds, soaked overnight
White fungus, soaked

Method:
1. Boil 2 litres of water in a pot.
2. Put in red dates, dried longan and white fungus to boil for 30 mins.
3. 30 mins up, put in 1/2 cup of rock sugar, mix well and add according to your preference.
4. Once done, put in soaked peach gums and snow lotus seeds to boil for another 30 mins.
5. Off the heat and serve warm or chilled.

Next. I got Dried Cranberries because I really loved them. I can snack on them while working from home and also make into cranberry spread for my breakfast on toast.

Homemade Cranberry Spread

Ingredients:
1 cup of water
1 tsp of lemon juice

Method:
1. Boil 1/2 cup of water before adding in dried cranberries.
2. Boil for 5 mins while stirring in the remaining 1/2 cup of water when it starts to dry up.
3. When 5 mins up, add lemon juice and mix well. Let it boil for another 8 mins. Keep stirring.
4. When 8 mins up, put into a blender with 1/2 cup of water and blend till smooth.
5. Once done, put the mixture back to the pan and boil it till the moisture is gone. 
6. Heat off and let it cool before putting in the fridge.

I did not add any sugar because the dried cranberries were made of sugar and sunflower oil, on top of cranberries. Reduce the sugar intake. How do you recognize if the sauce has thicken or moisture evaporated? When it starts to 'pop' or give you the small 'cranberry explosion'. Managed to make about 170g of Cranberry Spread.

Healthy Snacking while WFH

Before heading back to the office for the week, I mixed a pack of Macadamias and Cashews Nuts (each a 100g) as snack box for myself in the office. I finished them in 5 days. Just nice. Healthier snack than chips, right? If you don't wanna mix it yourself, Just Nuts has 6 different Nut Boxes mixed according to your needs like Weight Loss Nut Box and Antioxidant Mixed Nut Box, a few to name.

The remaining Cashews goes to our Homecooked Nasi Briyani by my Mister. No recipe because the steps are complicated and takes at least an hour or 2 to be ready to serve. And it takes me awhile to write up the recipe.

Homecooked Nasi Briyani with Cashews Nuts

Got some Almonds flakes for my baking spree. Trying out Almond Crisps so that if ever it succeeded, I shall do more for Lunar New Year. Because you know no New Year bazaar at Chinatown next year 2021 due to Covid-19 pandemic. Must faster stock up for baking this month or early Jan 2021. Just in case it goes out of stock like April 2020 when Singapore started Circuit Breaker a.k.a Lockdown.

Ingredients:
3 egg whites
28g of butter, melted
1/3 cup of caster sugar
1/4 cup of plain flour
1/4 cup of water

Method:
1. Preheat oven for 180°C.
2. Whisk egg whites and sugar.
3. Mix melted butter with flour then add in to egg mixture.
4. Continue whisking while adding water gradually into the batter till it is smooth.
5. Lay baking sheet on tray.
6. Spread batter thinly and evenly on the sheet with the back of the spoon.
7. Sprinkle Just NutsAlmonds on top evenly.
9. Bake for 16-18 minutes and let it cool once done before breaking it to store.

Failed on my 1st attempt where the batter was lumpy even after much whisking. Then with my little knowledge on baking, I melted the butter and mixed in the flour. And succeeded on my 2nd attempt with a smooth batter. Still need to practice more. Needed to achieve a well balanced colour of my Almond Crisps. Share your tips with me.
